<p>Many factors affect the quality of olive oil.&nbsp;To make a good quality olive oil, care must be applied starting with the growing process all the way through storage and bottling. </p>
<p><strong><a name="Few">A FEW BASIC POINTS</a></strong><br />As stated above, every aspect of olive production ultimately affects the oil itself: the growing region (climate, altitude, soil character), methods of growing, harvesting and transporting the fruit, as well as extraction and storage methods. The care that is taken in each of these steps not only affects the taste and quality of the olive oil but its cost, yield, and shelf life.</p>
<p><a href="http://www.blogbus.com/user/timing" target="_blank">Fruit maturity</a> is critical in determining the taste and quality of olive oil. In fact, the harvest time of an olive can be more important than its variety.&nbsp;For instance, green (early harvest) Tuscan olives and green Spanish olives may yield similar oils, whereas early harvest Tuscan olives and late harvest Tuscan olives may yield oils quite different from each other. Riper fruit yields more oil than green fruit. Its oil contains fewer antioxidants, and its taste will be milder. Oil made from green fruit has a longer shelf life.</p>

<p>Another key production factor is the <a href="http://www.blogbus.com/user/olive-varietals" target="_blank">olive variety</a>. Different olive varieties produce oils of varying intensity, from very mild to very bitter and pungent, with infinite variations in flavor and aroma, yield, antioxidant content, shelf life, and color.</p>
<p>Hand picked, good quality olives that are brought immediately to the mill to be crushed produce higher quality oil than mechanically harvested or damaged fruit (e.g. by the olive fly), or fruit that is left sitting around before milling. </p>
<p>It is possible to increase the yield from any type of olives by heating, by adding water, and by other measures (e.g. the use of chemicals) during the milling process, but this results in reduced oil quality. </p>
<p>Exposure to oxygen, light (inc. halogen and store lights), and heat is detrimental to the quality of the oil. Hence, stainless steel containers and dark glass bottles are preferable to other storing methods.&nbsp;The oil should be kept away from the heat.</p>

<p><strong><a name="Top_Ten">TOP TEN FACTORS IN PRODUCING QUALITY OLIVE OIL</a></strong><br />With these basic points in mind, we can now review the top ten factors in producing quality olive oil, according to the leading California expert, Paul Vossen.</p>
<p><strong>1. The Olive is a Fruit and Should Be Treated as Such</strong><br />The delicate nature of a ripe fruit requires that it be protected from pressure, temperature, and abrasion. Breakdown of the fruit begins the fermentation process and the development of defective oils. Affirmation of this premise is essential in producing quality oil.</p>
<p><strong>2. Control Diseases and Pests</strong><br />Any pest that directly attacks the fruit must be controlled to prevent fruit decay.</p>
<p><strong>3. Harvest and Transport Fruit With Care and Separate Ground Fruit</strong><br />Do not compromise the integrity of the fruit. Limit the depth of containers to reduce pressure on the fruit. Ground fruit is second-class fruit and should be separated from tree fruit.</p>
<p><strong>4. Classify, Separate, and Process Different Classes of Fruit Separately</strong><br />It is well known that different fruit qualities will produce different qualities of oil. As stated above, olive fruit should be separated by ground and tree fruit as well as by variety, fruit condition, ripeness, or other sanitary condition. Give priority to the best fruit.</p>
<p><strong>5. Do Not Store the Fruit</strong><br />Prolonged storage or slow working of the fruit is contrary to the production of quality oil. Oxidation and fermentation occurs in the stored fruit, which can lead to defects and off flavors in the oil.</p>
<p><strong>6. Process the Olives Quickly and at a Moderate Temperature</strong><br />Quality oil comes from fruit that is processed at temperatures below 86&deg;F. This is important for protection of the aromas and for the reduction of oxidation. </p>
<p><strong>7. Sell Several Grades of Oil</strong><br />There should be a whole line of oils offered for the consumer at different prices all classified by quality parameters reflecting the source of olives and oils produced as well as the different tastes.</p>
<p><strong>8. Store the Oil with Care</strong><br />Good storage is extremely important and will permit the proper aging and conservation of desirable flavor components. It is fundamental to store oil in clean stainless steel at temperatures below 65&deg;F. Dark glass bottles are preferable to clear bottles.</p>
<p><strong>9. Keep Everything Clean</strong><br />The failure to maintain cleanliness is a major factor in reducing oil quality since olive oil can so easily become contaminated. Odors from the fermentation of waste products can get into oils in the processing plant. Clean machinery, floors, and walls will prevent rancid odors that can also contaminate the oil. Cleanliness is especially important in the olive washing machines where the wash water needs to be kept clean at all times.</p>
<p><strong>10. Be an Olive Oil Expert</strong><br />Know just what it takes to produce, harvest, and process olives of high quality. Become familiar with the sensory evaluation of olive oil and be able to recognize the major defects that can appear in olive oil. Know your customers, educate them about the different classes of olive oil, and help them enjoy this noble food.</p>

   <title>2个月的记忆</title>
   <description><![CDATA[<p><span style="font-size: 16px; font-family: '黑体', sans-serif;">终于决定把博客从计划表上提前了，那张截止日期写着&ldquo;无止境&rdquo;的计划表，不知被我改了几次，撕了几遍，而又在伤痕累累的时候重新想起它，然后习惯性的跑到超市花2.5元买一本橙色或者绿色的笔记本，最廉价的那种。然后插着耳机，一个人踱着找个空教室，把手机关了，展平在课桌上，开始寻思自己能够往上写点什么。往往的，30分钟后，手机重新开启的时候，一个电话，好友说：&ldquo;该吃饭了。&rdquo;唔，好吧，我匆匆忙忙的收拾了本子，落下一个已经松松垮垮的已经开裂的红笔盖，然后继续扮演着自己想扮演的角色，试着把自己塞进这个世界。</span></p>
<p><span style="font-size: 16px; font-family: '黑体', sans-serif;">在那张还泛着皱褶的纸上，曾经想把&ldquo;博客&rdquo;两个字永远的抹去，2008年12月28号，发现这个blogbus已经承载了太多的乘客，太多的抱怨，太多的泪水和辛酸，爸说：&ldquo;看了你的博客了，感觉挺阴暗的。&rdquo;我撇撇嘴说：&ldquo;我只有阴暗的时候才会想去写博客嘛&hellip;&hellip;&rdquo;于是那个晚上，我没下太大决心就点下了&ldquo;全选&rdquo;和&ldquo;删除&rdquo;，和那一个学期的风风雨雨，点点滴滴，说了再见。当时心中一片空白，知道自己就跟眼前的屏幕一样，洗刷的如墙粉一样白&hellip;&hellip;</span></p>
<p><span style="font-size: 16px; font-family: '黑体', sans-serif;">又断了，每当我想到这里，思路就如同被凌空落下的电锯砸到的缎带般，化成找不着的思绪，随风飞远，这里，我想会是我永远的痛，失去的痛，坦白般的痛，痛在以心为球心，半身高为半径的球体内，19岁如同19把不同锐度钝度的刀子，尖的先划破，钝的在伤口上不停地摩擦着，流出的血里透着锈黄，混合成一种诡异的橙色，一直渗透到皮肤，毛孔，结成痂，被不锈钢铁桌的一角不小心勾破时，就是一片血肉模糊&hellip;&hellip;那片不一样的记忆，却有人能够很轻松的躲开，用鲜红的披风作掩护，任疯狂的公牛狂奔到筋疲力竭。</span></p>
<p><span style="font-size: 16px; font-family: '黑体', sans-serif;">最后，我还是选择了放弃，忘记。</span></p>
<p><span style="font-size: 16px; font-family: '黑体', sans-serif;">昨天，TH无意间跟我提起博客的事，我才发现这个已经长满杂草的地方，进来一看，开盛开着去年1月2号种下的雏菊，还有就是006上唯一的一篇博文。还是喜欢那句&ldquo;灯，也熬了一夜吧&rdquo;。现在陪着我醒着的，还是那盏灯，那盏从南京陪我到成都的灯，插头又松，灯又暗，我曾经把这当作我要换灯的借口，拉着朋友跑到超市，左挑右选，最后还是无功而返，因为它们其实都不属于我。</span></p>
<p><span style="font-size: 16px; font-family: '黑体', sans-serif;">看着灯，想起来大学前南京的那段日子，4个人，两个无锡，一个济南，一个呼和浩特，2008年7月20日，聚在江苏教育学院对面的招待所破破烂烂的108，然后因为我过敏的鼻子对房间某种微尘产生了过激反应，我们挤进了203，和一个学着意大利语的合住着，学着雅思，就两周，我却第一次感到了离家的遥远，Carly的纠结而低要求的reading，凌老太经典的writing，Gaetano如同李阳般疯狂的自我引荐和演讲，Mr.Zhang针对性超强的数学，还有万恶的Miss.Li每天都逃不掉的listening&amp;speaking&hellip;&hellip;可是，更加忘不了的，RY床上数不清的雅思和数学书，JH每天早上的双肩书包和《环球周报》，BW晚上的英文梦话，那台公用的放电老笔记本，下课的时候四人的《百战天虫2》，隔壁教室的免费网线，每天晚上一部原版片，还有黑张主任和白张主任。那时大家都是冲着Cambridge去的，大家一起笑，一起闹，收到rejection的时候是否有着一样的失望和惆怅呢？然后是否也有着一样的释然和坦然呢？Miss you 3...</span></p>
<p><span style="font-size: 16px; font-family: '黑体', sans-serif;">奥运会，让我认识了一批体育明星的支持者，我在里面混着，知道了大家一致的心愿，希望他一路走稳了，一路走好了，因为他们都还小。8月到10月，也让我感受到了现代的人气来得快，走得也快，3个月群里换了一批又一批讨论者。还记得我吗，寒，KK，SK，然，鬼，果，小白，叮当，培，小记想着你们呢。</span></p>
<p><span style="font-size: 16px; font-family: '黑体', sans-serif;">大学就这么开始了。</span></p>
<p><span style="font-size: 16px; font-family: '黑体', sans-serif;">9月，军训，我的生活圈子就这么定了，ecorl，WZ，JQ，kimi，绵羊，小路&hellip;&hellip;不说你们也知道的，一直想着你们的。</span></p>
<p><span style="font-size: 16px; font-family: '黑体', sans-serif;">10月，学生会，我的工作圈子也就这么定了，主任，蝌蚪，佳姐，脑瘫，穿山甲，小班长，怪兽，奥特曼&hellip;&hellip;虽然你们有的要走，有的要留，共事的时间不长，但是，有的时候，思路到了那个点，你们还是会回来。</span></p>
<p><span style="font-size: 16px; font-family: '黑体', sans-serif;">11月，伤心的事，纠结的事，开心的事，放纵的事，好多，好多。11号，没有秘密的夜晚。27号，感谢你们，真的，谢谢，第一次没有父母的生日，很完美。</span></p>

   <title>Expected</title>
   <description><![CDATA[<p><font face="'黑体', sans-serif" size="3">新年了，不知不觉，其实过得很好，其实过得很平，做着自己。</font></p><p><font face="黑体" size="3">时间依旧按照计划流逝着，不紧，不慢，准备着考试着我们想起了去年的这个时候，很忙，很紧张。</font></p><p><font face="黑体" size="3">现在，在大学，或者在家里，或者在宿舍，绵绵细雨在窗外不停歇，阴冷，似乎诉说着恋人的悲剧，似乎预示着新一轮的堕落。</font></p><p><font face="黑体" size="3">很多的同学回家了，可能有空调，可能有暖炉，总之，复习的时候应该不是痛苦的吧。</font></p><p><font face="黑体" size="3">很多同学想家了，阔别已久的家乡，母校，是否已被白雪皑皑覆盖，是否已被寒风凛凛充斥，一通通电话，一声声问候，诉说着远在他乡学子的思念和眷恋。是啊，快放假了，放了假大家就都高兴了吧，大家就都忘了这感觉了吧？</font></p><p><font face="黑体" size="3">突然很想和爸妈拥抱一下，向他们说声：&ldquo;新年快乐。&rdquo;最简单的问候中，包含的才是最真的感情吧，我一直这么相信。</font></p><p><font face="黑体" size="3">成都并没有像我们预期的那样下雪，新年悠然飘起的细雨，如无聊中的惆怅般，剪不断，理还乱。湿了头发，湿了衣衫，浑然不知，撑着伞的手已经冻僵，这或许是一次奇妙的历险，亦或是一次沉默的幻想，醒后才知，都是虚空。</font></p><p><font face="黑体" size="3">新年睡不醒或许已经成了通病，8点多的宿舍楼里依然只有走廊的电灯发出电流在运动的声音，楼外面的公路上驶过通宵的旅程，昏黄中透着疲惫，是啊，灯，也熬了一夜吧。</font></p><p><font face="黑体" size="3">怀旧风四起，张信哲，邰正宵，听惯了周杰伦王力宏的我们是否还记得他们的歌，他们红着的日子，呵呵，他们红的时候我们还在听鞠萍姐姐讲故事吧。忧伤，甜蜜，悲情，浪漫，仿佛在R&amp;B风行的现在，他们的声音才是一道亮丽的风景，怀旧，永恒的话题。</font></p><p><font face="黑体" size="3">就像计划的那样，我们考试还没结束，高代，数分肆虐的晚上，突然想看一下传概的章节，不是为了考试，只是为了让狂乱的思绪平静一下，就像初秋的雏菊一般，简简单单，最好。</font></p><p><font face="黑体" size="3">简单的游戏，简单的思绪，简单的旋律，简单的生活，希望那朵雏菊，still on its way，绽放后，凋零的时候，能够洒脱地离去，飘在荷兰大街上的并不仅是菊香，还有生机和浪漫。</font></p><p><font face="黑体" size="3">Sun is still on its way.</font></p><!--sp--><br /><br /><div class="sysmsg"><b><a href="http://www.blogbus.com" target="_blank">博客大巴，你的个人传媒早班车</a></b></div><br /><br />]]></description>
